A lot of you guys that read my blog seem to be on a baking/cooking quest. So I thought I would help fuel that passion by adding some fun, good result recipes.
These cookies are really good and everyone seems to gobble them up, no matter how picky they are.
I call them my Colorado cookies because they remind me of visiting my Grandparents in Colorado Springs : )
What are they? Imagine an oatmeal cookie and a great chocolate chip cookie had a baby :)
Colorado Cookies:
makes about 3-4 dozen depending on the size of cookie scoop you use
2 sticks of room temperature butter (1 cup)
1 cup light brown sugar
1 cup granulated sugar
2 large eggs (room temperature works better)
1 1/2 tsp vanilla
2 cups all purpose flour
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
2 cups old fashioned rolled oats ( I use organic toasted oats from Trader Joes)
One 11.5 or 12 oz package of milk chocolate chips ( you can also use semi-sweet)
Preheat oven to 350 degrees
With an electric mixer fitted with the paddle attachement beat the butter and then add the sugars and beat for about 1-2 mins. Scrape down the sides of the bowl and add both of the eggs and vanilla. Mix until combined. I mix mine until it's fluffy.
In a bowl, combine the flour, baking soda, baking powder, salt and rolled oats. Mix together with a wooden spoon and then add it to your butter mixture. Beat on a medium/low speed until everything is combined and then add your bag of chocolate chips and give it a quick stir. The dough will be somewhat stiff.
Using a 1 1/2 inch cookie scoop, drop the dough onto a parchment lined cookie sheet about 2 inches apart. They will spread out quite a bit. In my oven I bake them for about 11 mins. So I would say between 10-12 mins. The oven time will vary depending on your own oven. The cookies should be golden brown on the outside. As they cool they will flatten a bit and they will be chewy in the center.
